Tac n' Guac


Hello all!
 
I'd like to start my blog off with a ligher post, a recipe.
 
Eventually we're going to delve into more serious content but for now I'd like to introduce you to a recipe that will replace your craving for mexican! (those tortillas and cheese aren't helping your journey towards health!)
 
 
 
Paleo Tacos with Guacamole

Ingredients

1/2 pound grass fed, pasture raised ground beef;
1/2 white onion;
1/2 tomato; &
1 head radicchio, or any ‘cup-shaped’ lettuce such as boston .

Taco Seasoning

1 tbsp. chili powder;
2 tbsp. garlic powder;
1/4 tsp. dried oregano;
1/2 tsp. parka;
2 tsp. ground cumin; &
1 tsp. celtic sea salt.

Guacamole

1 ripe avacado;
1/2 white onion (other half from taco meat);
1/4 cup chopped cilantro + extra for garnish;
1/2 tomato (other half from taco meat);
Juice of 1 lime;
1/4 tsp. cumin;
1/4 tsp. white pepper;
1 clove garlic; &
dash of celtic sea salt.

Directions

In skillet, saute onion;
Add meat and cook through;
Stir in taco seasoning, slowly;
Add 1/4 c. water;
Bring to boil, reduce heat and let reduce, stirring occasionally - about 10 min;
Add tomato, chopped, cook 2 min;
While cooking taco meat - prep guac; combine all ingredients in food processor and pulse until combined - put in the fridge to chill;
Prep radicchio by cutting off the bottom and separating the leaves to make ‘taco shells’; &
Place the taco meat in each shell, add a few heaping tbsp. of guac, top with cilantro and DEVOUR!
